Aggie MacKenzie, who shot to fame on How Clean Is Your House and recently appeared on Celebrity Masterchef, has published a family cookbook and chatted to Agenda about meringues, greengrocers and pressure cookers.
Q: What prompted you to write a family cookbook now?
A: I’ve always been more into cooking than cleaning. This is something I’ve wanted to do for a long time. I sat down with my sons, who are very fussy about their food and who were involved with the book from the very beginning.
Q: If readers were to take one key thing from the book what would it be?
A: Not to be frightened of cooking. A lot of people believe they can’t cook but if you can read you can cook! There’s nothing more fulfilling than feeding people.
Q: What’s your top money saving tip?
A: Don’t buy chicken pieces, buy a whole bird, it’s so much cheaper. Also, local greengrocers are often much cheaper than supermarkets, partly because it’s easier to buy veg' loose.
Q: What’s the most surprising foodie tip you’ve ever come across?
A: Don’t store cooked rice in the fridge for more than 24 hours. It can become extremely toxic surprisingly quickly.
Q: Which recipe are you most proud of?
A: I like the meringues with sweet coffee and pecan cream. There’s no mystery to making meringues, they are the easiest things in the world to make, so cheap and they look spectacular.
Q: You mention pressure cookers in the book. Why are you in favour of them?
A: They save you money partly by using less energy but also because you can cook cheaper cuts of meat much more quickly and still make them tender. It’s a no brainer
